I made cappuccino cupcakes.
Who doesn't love the taste of coffee with the taste of great butter-cream cheese frosting.
My girls LOVED it!
1/2 cup of butter
1 1/2 cup of sugar ( I used less)
3/4 cup of milk
2 tablespoons of instant espresso or coffee granules
1 3/4 cup of flour
1 1/2 teaspoons of baking powder
1/4 teaspoon of salt
Preheat oven to 350 degrees Fahrenheit.
Mix coffee granules with milk until they dissolve completely.
Beat butter and sugar with electric mixer on a high speed, add eggs one at a time until mixture is combined and fluffy. Lower the speed on the mixer and add flower alternately with milk.
Pour prepared batter into 8 cupcake cups.
Bake cupcakes 25-30 minutes.
Let cool on a rack and frost with your favorite cream/frosting.
